Herb Gardening

Tonight we began preparing the herb garden with an initial pruning, leaf collection and compost spread. The sage, oregano, lavender, thyme and chives are already coming up. We pulled out the chives, because they had become grassy, and the thyme was out of control.  We will eventually replant these and add rosemary, cilantro, basil, dill and parsley.  I’ve been collecting recipes that will utilize these herbs and think I’ll try some drying too this year.  I may have to try the herb roasted whole chicken posted today at www.thepioneerwoman.com.
