Hummus

We love hummus and have always wanted to try and make it.  This summer we went to Neomande in Raleigh, North Carolina.  It is a Mediterranean deli and grocery.  You can find Neomande’s famous original hummus recipe here.  I modified it a little by using canned beans instead of dry.  I also added a little more olive oil.

The Ingredients: 3 cans garbanzo beans, 2 cloves garlic, three lemons, 1 c. tahini, 1/3 c. olive oil, cilantroIMG_6768 
Chop two cloves of garlic in a food processor.IMG_6770 
Add the garbanzo beans and pulse.IMG_6772
You may need to add 3-5 T. of water to help the food processor mix everything smoothly.

Add the juice of 3 freshly squeezed lemons.  Approximately 1c. IMG_6786
Add 1c. of tahini.IMG_6795 
Add 1/3 c. of olive oil.IMG_6804 
We like to eat hummus drizzled with a little olive oilIMG_6819
and with some freshly chopped cilantro on top. IMG_6832
Serve with carrots, pretzel chips, warm pita bread or crackers.

Cooking Confession #1.
I forgot to add the second garlic clove.  I had to cut the recipe in half and make it twice because my food processor wasn’t big enough to hold the whole recipe.  The second time around I forgot the garlic.  It needed the second clove.  Note to self…start looking for a larger food processor or just put them both in the first batch.

  3. I was wondering if you ever used that tahini you bought at Neomonde's. I am going to have to try the recipe. ps...If you get a new food processor, I'd love to buy your old one. That thing works great!

  4. Like your blog Meg. We love hummus too. I had been given the recipe a long time ago and still haven't made it. The also sell the hahini at Super Valu.
