Chicken Tortilla Soup

This soup only takes about 10 minutes to throw together which makes it super convenient after a long day at work.  It’s nothing fancy, but it hits the spot on a cold winter night like last night.

Ingredients:
2 c. Salsa
4 c. Chicken Broth
2 cans Navy or Great Northern beans (drained and rinsed)
1 lg can of shredded chicken (strained)
1 t. cumin
Optional Toppings: sour cream, tortilla chips and shredded cheese.
Directions: Mix all ingredients together and heat to desired temperature.

You really can’t mess this up.  Typically we use a little more salsa, but we only had 2 cups left and it worked.  We added the second can of beans tonight and sometimes we only use one.

  1. I have been thinking about this soup all week but have been getting home too late to make it! Going out to dinner tonight, game tomorrow... hopefully I can make it Sunday night!
