I saw this recipe in Food and Wine and thought it would be megasimple, frugal and perfect because fries are Kent’s favorite. We made them this week and they were really good. We did made a few changes to how it was originally written.
Ingredients:
2 large baking potatoes (cut into 1/2 inch sticks)
1/4 c. olive oil
1 t. garlic (minced)
2 t. fresh rosemary (minced)
1/4 c. parmesan cheese
Salt and pepper
Directions: Preheat oven to 425 degrees. Toss fries in bowl with olive oil. Cover thin baking sheet with foil or parchment paper. Spread fries in single layer on baking sheet. Bake in upper third of the oven, turning with spatula once or twice until golden, approximately 30 minutes. Remove fries to sprinkle with garlic and rosemary and toss well. Bake for an additional 5 minutes. Transfer fries to a bowl and toss with grated parmesan cheese. Season with salt and pepper.
**Tip – Be sure to line the pan. Even with the oil they will stick.

ReplyDelete- dice all or just your favorite of the following vegetables: potatoes, carrots,
parsnips, onions, rutabaga, turnips (any root vegetables)
- olive oil, garlic, marjoram, ceyenne pepper, salt n pepper, parmesan cheese
- roast in a single layer on a baking sheet in the oven until desired texture
Now I can't say that I really care for most of those vegetables by themselves but for some reason in this mixture, mmmmmmm!
